The Background
After creating our Signature Gin, we knew we needed something for the true gin aficionados and for classic cocktails that needed that classic gin flavour.
Our first gin was light and approachable—perfect for those new to the spirit. But what about the gin lovers? The juniper enthusiasts? The people who want their G&T to taste like, well, gin?
The initial formula seemed simple: half the cinnamon, triple the juniper. But the mandarin that worked so beautifully in our Signature no longer fit. We needed something that would cut through—something with edge and character.
We didn't want to fall back on standard citrus. So began another round of experimentation: dates, chrysanthemum, the ill-fated hops experiment, and the divisive turkey rhubarb (trust us, opinions were strong). But it wasn't until we discovered the electric zing of native finger lime that everything clicked into place.
The final piece of the puzzle came from our supplier, who suggested adding Tasmanian pepperberry for a touch more fruity spice. One taste, and we knew we'd found the perfect balance between traditional gin boldness and uniquely Australian character.
